Life Down Wattle Lane v2 - Excess Beetroot? A Simple Relish

One of the easiest vegetables to grow has to be Beetroot or Redbeet. 

I got a little carried away and we ended up with more than we could eat. 

My preferred way of cooking them is roasted with potatoes, kunara and pumpkin. I love roasted chicken and vegetables. Between the two of us we can make a roast chicken to cover 2 dinners and 1 lunch when served with a good roast vegetable selection, ohh and a garlic ciabata. It's good value, simple and one of my favourite meals.

But we encountered a little problem with our beets this year. If you let them grow to big they become very fibrous or woody. There're inedible as a roast vegetable.

But they make a great relish. It was a bit of a mission grating them, but once that part was done it was a very simple and quick recipe.
